Chocolate Cookies

This is the perfect chocolate cookie, so easy and convenient in that you can stick them in the freezer and then bring'em out, slice and pop'em in the oven and ta-da! Fresh, heavenly cookies!

Ingredients

Quantities are shown as originally provided.

  • 1 1/4 flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 11 tbsp of butter, 156 g, at room temp
  • 3/4 cup raw sugar
  • 1/2 tsp fleur de sel(sea salt)
  • 1 tsp of vanilla extract
  • 3.5 oz bittersweet chocolate, chopped into bits

Instructions

    Shift the cocoa. Mix flour, cocoa and baking soda.

    Beat butter til creamy. Add sugar, salt and vanilla and mix.

    Add ginger slices and stir briefly to infuse ginger essence into oil.

    Pour dry into wet and mix til just incorporated. Add chocolate chips and mix until just incorporated.

    Divide dough to 2 pieces and shape into 1 1/2 inch logs. Wrap in cling wrap and refrigerate 3 hours or freeze for longer keeping.

    Take them out of the refrigerator/freezer and slice into 1/2 inch slices with a sharp knife. Bake at 325 F or 163 C for 12 minutes.
