  • 3 medium-sized quinces
  • 2 cups of sugar
  • 2.5 cups of water
  • 1/2 tablespoons lemon juice
  • 3 cardamom pods

    Wash quinces. Peel and chop or grate them. Pour water into the pot and add the chopped quinces.

    Put the pot on low heat and let them cook and soften a little. This step takes about half an hour. Once the quinces are slightly soft, add the sugar and cardamom pods.

    With gentle heat for 2 to 2.5 hours, let the jam cook and turn red. Once the jam is ready, add the lemon juice and let the jam simmer for 5 minutes, then remove from the heat and let it cool.

    Pour the cooled jam into a jar and place it in the refrigerator. To have bright red jam, the heat must be gentle during cooking and you should cover the pot.
