- 1 tbsp Oil

Instructions

Prepare the winter melon by peeling off the outer skin completely. Cut the melon into quarters lengthwise, then slice into bite-sized pieces

Finely mince the shallot. Then chop the green onions and cilantro to use as garnish later
- 4
Cook the winter melon soup:
- 5
In a large pot over medium-high heat, add a splash of oil. Once hot, add the minced shallots and sauté for 1 to 2 minutes until fragrant

Add in the ground pork. Use a wooden spoon to break up any large clumps and cook for 2 to 3 minutes, or until the pork is lightly browned
- 7
Pour in water and bring it up to a boil. Skim off any impurities that rise to the surface. Lower the heat and let it simmer for about 5 minutes
- 8
Add the cut winter melon pieces to the pot. Continue simmering for 5 to 10 minutes, or until the melon turns translucent and tender

Stir in the sugar, chicken bouillon, fish sauce, and salt to taste. Adjust the seasoning as needed to your preference
