  • 2 double chicken breasts
  • 2 teaspoons ginger crushed
  • 2 teaspoons vegetable oil
  • 2 teaspoons seasame oil
  • 2 cups cooking wine or sherry
  • 5 cups water
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 teaspoon soy sauce
  • 1 cup spring onion sliced for garnish

Instructions

    Slice the chicken into bite-sized pieces.

    Heat a wok and add half the sesame oil, vegetable oil, and ginger. Stir until fragrant, then add half the chicken and stir-fry until cooked. Remove from the wok and set aside.

    Repeat with the remaining oil, ginger, and chicken.

    Return all the cooked chicken to the wok. Add the cooking wine and bring to a boil.

    Once boiling, add the water, sugar, salt, and soy sauce.

    Bring to a boil again, then reduce the heat and simmer for 20 minutes.
