Ingredients

Quantities are shown as originally provided.

  • 2 cups red cabbage (thinly sliced)
  • 2 cups white cabbage (thinly sliced)
  • 1 cup grated carrots
  • 2 celery ribs (diced)
  • ¼ cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup (or honey, optional)
  • 1 tablespoon Dijon mustard
  • 1½ teaspoons salt
  • ¼ teaspoon black pepper

Instructions

    Put sliced cabbages, grated carrots and diced celery in a large bowl.

    Coleslaw dressing:

    Whisk together yogurt, lemon juice, vinegar, maple syrup, mustard, salt and pepper.

    Pour the dressing over the coleslaw base and give it a good toss.

    Optionally, garnish with diced celery and serve immediately.
