Ingredients
Quantities are shown as originally provided.
- 1 cup cilantro coarsely chopped
- 1 cup green onion, cut into 1 inch-ish pieces
- 1/2 cup mint leaves
- 1 shallot, coarsely chopped
- 1/3 cup lime juice
- 2 tbsp fish sauce
- 1 tbsp roasted rice powder
- 1/2-1 tsp roasted Thai chili flakes, to taste
- 1 tbsp tapioca flour
- 1/2 cup panko bread crumbs
- 1.25 lb ground turkey or ground beef or any ground meat you love
- Lettuce of your choice, I love bib lettuce!
Instructions
- 1
Add the cilantro, green onions, mint leaves, and shallot to a food processor.
- 2
Process until finely chopped. You don’t want big chunks of the herbs or cilantro stems in your meatballs, so once it looks good to you, add to a mixing bowl.
- 3
Add in the lime juice, fish sauce, roasted rice powder, chili flakes, tapioca flour, panko bread crumbs and ground meat.
- 4
Combine until just mixed.
- 5
Form into meatballs and place on a large baking sheet, or two cookie sheets.
- 6
Broil for 15 minutes, or until crispy looking on top and cooked through.
- 7
Eat with jasmine rice, and lettuce and enjoy!
