Ingredients

  • 1 lb fingerling potatoes, washed and dried
  • 5 tbsp olive oil
  • 1 tsp sea salt (or to taste)
  • 1 tsp black pepper
  • 2 clove fresh garlic, minced
  • 1 tbsp fresh dill (or more to taste)
  • goat cheese to taste
  • 1/4 cup green peas
  • 1/4 cup fresh snap peas

Instructions

    Preheat the oven to 400°F and line a large baking sheet with parchment paper. Set aside. In a large bowl toss the potatoes, olive oil, garlic, salt and pepper together so that the potatoes are completely coated. Transfer the potatoes to the prepared pan and spread out into one layer, leaving room between each potato. Roast for about 45 minutes or until they potatoes are brown and crispy. About 20 minutes in stir potatoes so brown the other side.

    Allow potatoes to cool before tossing with fresh dill, goat cheese, and peas. Serve hot!
