  • 500 gram chicken pieces
  • 2 teaspoons peanut oil
  • 8 slices ginger
  • 8 cloves garlic
  • 10 shallots sliced into long lengths
  • 8 mushroom cups cut in half
  • 4 bok choy sliced
  • 2 teaspoons oyster sauce
  • 2 teaspoons dark soy sauce
  • 2 teaspoons sweet sherry
  • 1 teaspoon soy sauce
  • 2 cups chicken stock
  • 1 pinch pepper

Instructions

    Chop the chicken into bite-sized pieces. Pat dry with kitchen paper.

    Heat a claypot and add the peanut oil. Add the ginger and garlic, stir-frying until fragrant.

    Add the chicken pieces and brown them, turning regularly with chopsticks.

    Once browned, add the oyster sauce and soy sauces. Reduce the heat and cook for a further 5 minutes with the lid on.

    Remove the lid and add the bok choy and mushrooms. Cook for an additional 2-3 minutes.

    For the sauce, mix together the sweet sherry, soy sauce, pepper, and chicken stock. Pour into the claypot. Serve Hot.
