Fried Tofu in Tomato Sauce / Dau Hu Sot Ca Chua
I want to preface this entry by saying that I'm a carnivore, through and through - and what that means is that I need to have some kind of meat with every single meal. Otherwise, it just doesn't really feel like a complete meal. The one exception to that rule, though, is Đậu Hũ Sốt

Ingredients
Quantities are shown as originally provided.
- 12 oz Fried Tofu
- 4 Roma Tomatoes
- 1 Small Shallot
- 1 tbsp Minced Garlic
- 1 tbsp Tomato Paste
- 1/3 cup Water
- 1 tbsp Chicken Bouillon
- 1/2 tbsp Sugar
- 1 tbsp Fish Sauce
- Salt and Pepper To Taste
- Green Onion

Prep:

Finely mince shallots and garlic, chop green onions to use as a garnish, and finally, cut Roma tomatoes into quarters

Cook:

To a pan on medium-high heat, add a splash of oil. Sauté minced shallots and garlic for 1-2 minutes or until fragrant. Add tomato paste, and continue to cook for another minute

Add Roma tomatoes and cook to allow the tomatoes to release some of their juices. Add water, then season with chicken bouillon, sugar, fish sauce, and black pepper. Then add the fried tofu

Bring up to a rolling boiling, reduce the heat to low, and simmer covered for 5-10 minutes to allow the tofu to absorb the sauce

Finish with black pepper, and adjust seasonings to taste

Serve over a bowl of white rice, and garnish with green onions!
