- 2 lbs Pork Belly
- 1/4 cup Kosher Salt
- Foil
- 1/4 tsp Five Spice Powder
- 1/4 tsp Garlic Powder
- 1/4 tsp Sugar
- 1/4 tsp White Pepper
- 1/4 tsp Salt
- 1/4 cup Water
- 2 tbsp Soy Sauce
- 1 tbsp Sugar
- 1/4 tsp Sesame Oil
- 1 tbsp Oil
- 2 slices Ginger
- 2 Garlic Clove
- 1 Bay Leave
- 2 stalks Green Onion (Optional)

Pork Belly:

Combine five-spice powders, garlic powder, sugar, white pepper, and salt in a mixing bowl. Rub spices on the meat side of the pork belly only

Then, using a tenderizer, fork, or skewer, poke holes all over the skin side of the pork belly

Cover all the sides of the pork belly meat with foil, exposing the skin. Then completely cover the top of the pork belly skin with kosher salt

Air fry at 250F for 30 minutes

Remove salt cap, and brush away excess salt; return pork belly to air fryer at 400F for 20 minutes or until internal temp reaches 145F

Broil on high for 2-4 minutes or until pork belly skin has expanded and crisped up

Let the pork belly cool for 10-15 minutes before slicing

Sweet Soy Sauce:

In a saucepan, add a splash of oil, and sauté sliced ginger and smashed garlic cloves until fragrant

Add water, soy sauce, sugar, sesame oil, bay leaf and green onion. Bring up to a boil, and simmer on low to allow the aromatics to steep in the liquid

After 5-10 minutes, remove any scum that float to the top, and remove all the aromatics
