Ingredients

  • 1 quart Leftover Bo Kho
  • 6 Corn Tortillas
  • 1 cup Shredded Mozzarella
  • 1/2 White Onion
  • 1 bunch Cilantro
  • Lime

Instructions

    Prep:

    Dice onions and finely chop cilantro. Add both to a bowl and mix well

    Bo Kho Tacos:

    Reheat bo kho in a pot and remove the carrots. Let the broth reduce slightly, then remove the beef shank and tendon. Add beef to a bowl, and using two forks, shred the meat and put aside

    To a non-stick frying pan on medium-high heat, add corn tortillas. Top with shredded mozzarella and shredded beef, and cook for 1-2 minutes. Add diced onions and cilantro, fold tacos over in half, and continue to cook until the cheese is fully melted and tortilla is slightly crispy

    To serve, garnish tacos with more onions and cilantro, and pair with lime wedges and a bowl of broth with onions and cilantro
