Cucumber Salad with Nepal Spices (Kakra ko Achar) काँक्राको अचार
This Nepali cucumber salad is a beloved recipe that combines the refreshing flavors of cool, crunchy cucumbers with the warm kick of Nepali spices. Ingredients

- 2 cucumbers
- 1/2 teaspoon salt
- 2 tablespoon Sesame seeds (Toasted)
- 4 cloves garlic (finely chopped or crushed)
- 1 teaspoon ginger (finely chopped or 1/2 teaspoon crushed ginger)
- 5 tablespoon vegetable oil
- 2 dried chilli
- 2 teaspoon lemon juice
- 1 tablespoon soy sauce
- 1 teaspoon brown sugar

Prepare the cucumber

Half peel the cucumber skin into striped then cut the cucumbers into smalls chunks. I usually cut the cucumber in half horizontally then cut the cucumber into semicircle pieces

Add salt to the cucumber and mix well. Set aside for atleast 20 minutes to allow the water to come out of the cucumber. Once done squeeze the cucumbers and remove any excess water.

Make the dressing

If sesame seeds not roasted then lightly roast the sesame seeds on low heat until golden brown. Set aside in a bowl.

Add garlic, ginger and dried chilly to the bowl of sesame seeds.

Heat the vegetable oil in a pan until the oil starts smoking. Then pour this smoking oil into the bowl with all your ingredients (sesame seed, garlic, ginger, dried chilly). You will hear and see a satisfying sizzle.

Add soy sauce, lemon juice and brown sugar and stir well. Your dressing is now ready!
