Decadent Tofu Chocolate Mousse (but you couldn't tell!)
A rich and decadent chocolate mousse that gets its silky texture from soft tofu, but you wouldn't be able to tell! It's easy, healthy, and tastes just like a "regular" chocolate mousse!

Ingredients
- 150 g dark chocolate, roughly chopped (see note)
- 300 g soft or silken tofu
- 1/4 cup (packed) dark brown sugar or white sugar
- Flavourings of your choice (see note)
- 1/8 tsp table salt
- For serving: fresh fruit, crumbled cookies, cake cubes

Put the chocolate in a heat proof mixing bowl, then set it over a pot of simmering water (the bowl should not touch the water). Let it melt, stirring once or twice.

While the chocolate is melting, place the tofu, sugar, flavourings or your choice, and salt in a food processor or blender and blitz until smooth, scraping the side once.

Once the chocolate is melted, turn off the heat but keep the bowl on the pot. Gradually whisk in the tofu mixture until well blended, turning on the heat if the chocolate becomes too stiff and isn't blending smoothly. Taste and adjust the mousse as desired.

Remove the mousse from the pot. Optional step: Using an electric mixer or a stand mixer, beat some air bubbles into the mousse to lighten it up for a few minutes, or longer if you'd like to incorporate more air.

Portion the mousse out into serving dishes then chill until ready to serve.

Top the mousse with fresh fruit, crumbled cookies, cake cubes, or whatever you like!
