- 4 spring onions
- 1 piece ginger
- 500 gram chicken boned, cut into 1-inch strips
- 2 tablespoons oil
- 3 tablespoons lemon rind
- 125 gram Chinese mushrooms sliced
- 1 chili pepper seeded and minced
- 1/2 cup lemon juice
- 3 romaine lettuce leaves diced

In a bowl, combine the sherry, spring onions, lettuce leaves, and ginger.

Add the chicken to the bowl and let it marinate for 15 minutes.
