Yucca Root Fries

- 2 lbs of whole yucca (peeled and cut into chunks)
- Salt to taste
- oil for frying

Before you begin: If you are using a fryer, you can make sure it is all set up now, and heating up. If you are frying in a pan, just add the oil to the pan and leave it over low heat, just so it warms up, but not too hot to get to temperature too fast – I highly recommend you use a thermometer to help you maintain the temp at 350F

add the yucca chunks to a medium pot and cover with water

season with a little salt

bring to a boil and let the yucca cook until partially cooked, to cooked all the way through**

drain all the water, and pat the cooked yucca dry with some paper towel
- 6
arrange the yucca in the oil

fry until golden brown

place the fried yuccas over paper towel to absorb some of the oil

season with salt to taste
