I'm biased, but I think this is the BEST buttermilk pancakes recipe in existence.

  • 3 C self-rising flour ((339 grams))
  • 4 Tbsp granulated sugar
  • 1/2 Tsp baking soda
  • 1/2 Tsp baking powder (make sure it says "double acting")
  • 1/4 Tsp fine sea salt
  • 2 large eggs (beaten)
  • 4 Tbsp vegetable oil (or melted butter)
  • 2 C buttermilk
  • 2 Tbsp vegetable oil (for frying)
  • 2 Tbsp salted butter (for frying )

Instructions

    Grab a big mixing bowl and toss in all your dry ingredients—flour, sugar, baking soda, baking powder, and salt. No need to worry about sifting; just dump them in.

    Add the eggs, then pour in the buttermilk, and the vegetable oil or melted butter (your choice). Whisk it all together until everything’s well mixed. Don’t stress over a few lumps; they’re totally fine. Stir it all up as much as you need to because once it’s mixed, you won’t be stirring it again.

    After mixing, set the bowl aside for at least 10 minutes. This gives the baking powder time to do its thing, helping the batter rise a bit—kind of like a yeast dough. You’ll notice it getting puffier, which is perfect.

    Place a large skillet over medium heat and let it warm up for a few minutes. Once it’s nice and hot, add a bit of oil and a small pat of butter (I usually go with about 1/2 teaspoon of oil and 1 teaspoon of butter). Swirl it around until the pan is coated.

    Now, gently scoop out 1/3 cup of batter. Be careful not to disturb the batter too much—you want to keep those air pockets intact for fluffy pancakes! Drop the batter into the center of the pan. If needed, use the back of your spoon to spread it out into a circle.

    Keep an eye on the pancake as it cooks. After a couple of minutes, the edges will start to look dry. Gently lift the edges with a spatula to check for browning. Once the bottom is golden brown, reduce the heat to medium-low and cook for a few more seconds before flipping.

    Flip the pancake quickly and carefully. If a little batter splashes out, don’t worry—just push it back in or remove it from the pan. Cook the other side for another couple of minutes. If the first side isn’t as brown as you’d like, flip it back over for a minute or so to brown it further. Once it’s done, transfer the pancake to a warm oven while you cook the rest.

    Add more oil and butter to the pan and repeat the process for the remaining batter. Adjust the burner temperature as needed, and cook as many pancakes at a time as you’re comfortable with, making sure they don’t touch in the pan. Dassit!
