Chinese Red Cooked Pork 紅燒肉
This is meat dish is an all time favorite comfort food from my childhood, pork cooked to fragrant, mouth melting perfection.

Ingredients
Quantities are shown as originally provided.
- 3 pounds (1.3 kg) pork belly
- 1 to 2 tbsp oil
- 4 slices ginger
- 2 sprigs of spring onions, cut into 2 inch lengths
- 5 tbsp dark soy Sauce
- 4 tbsp Shao shing Rice Wine
- 2 tbsp rock sugar
- 1/2 tsp salt
- 3 star anise
- 1 cup boiling water

Wash the pork belly and slice into 3/4 inch slices.

Heat wok til hot then add oil. Carefully add the ginger and the spring onions and stir a few times until the scent rises.

Add the pork and stir until no longer pink.

Add soy sauces, wine, sugar, salt and anise and stir to coat everything evenly. Add the boiling water and stir. When boiling again, lower heat to simmering.

Simmer for 1 hour to 1 1/2 hour, stirring occasionally to prevent the bottom sticking, topping up water as needed.

Check meat readiness. If chopstick can easily penetrate the fat, it is ready.

Remove the pork to serving dish and boil the sauce down at high heat until the thick and glossy. Pour over pork.
