Spam Musubi

Ingredients

- 1 can Low Sodium Spam
- 3 sheets Nori (Seaweed)
- 3 cups Rice
- 3 cups Water
- 3 tbsp Furikake
- 1/2 cup Soy Sauce
- 1/4 cup Sugar
- 1/2 tbsp Mirin
- 1/2 tbsp Sake
- 1/2 tbsp Minced Garlic
- 1/2 tbsp Grated Ginger

Rice:

Wash rice until water runs clear. Cook rice in a rice cooker or stovetop. Fluff rice when done and mix in furikake

Teriyaki Sauce:

Combine soy sauce, sugar, mirin, sake, minced garlic, and grated ginger. Mix until sugar is fully dissolved

Spam:

Cut Spam into 8 even slices and marinate Spam in teriyaki sauce for 30 minutes

Heat a non-stick pan to medium heat, and lightly brown Spam on both sides for 3-4 minutes, making sure to not burn the Spam

Turn heat to low, and pour in remaining sauce, and let it caramelize and thicken for 2-3 minutes, then set aside

Assembly:

Place a sheet of nori (seaweed) shiny side down on a clean surface, and cut it into three equal strips

Scoop about 1/4-1/2 cup of rice and press it into the musubi mold and press firmly and form rice

Place a slice of glazed Spam on top of the rice

Wrap the nori around the rice and Spam, putting the seam side down to seal the nori

To serve, cut in half, or wrap with plastic wrap to enjoy snacking on the go!
