  • 2 lbs Skin On Pork Belly
  • 15 Whole Garlic Cloves
  • 1 tbsp Fish Sauce
  • 1/2 tbsp Chicken Bouillon
  • 1/2 tsp White Pepper
  • 1 tbsp Cornstarch
  • Oil, For Frying
  • 2 tbsp Soy Sauce
  • 1 tbsp Water
  • 1 tbsp Vinegar
  • 1/2 tbsp Sugar
  • 1 tbsp Garlic, Minced
  • 2 Thai Chilis, Chopped

Instructions

  1. 1

    Make the Pork Belly:

  2. 2

Slice the pork belly into thin, bite-sized pieces about half an inch thick, so they cook evenly

  3. 3

Add the pork belly to a mixing bowl. Season with whole garlic cloves, fish sauce, chicken bouillon, white pepper, and cornstarch. Mix well until every piece is evenly coated

  4. 4

Heat oil in a pan. Carefully add the pork belly and let it sit without moving for a minute to brown. Continue cooking for another 4-5 minutes, or until golden and cooked through. Remove and drain briefly on a rack or paper towels

  5. 5

Make the Soy Sauce Dipping Sauce:

  6. 6

Finely mince the garlic and thinly slice the Thai chilis. In a bowl, combine soy sauce, water, vinegar, sugar, garlic, and chili. Stir until the sugar fully dissolves. Taste and adjust for sweetness or heat

  7. 7

    Serve:

  8. 8

Add steamed white rice to a bowl, then layer in vegetables such as sliced cucumbers. Top with pork belly. Spoon the sauce over the pork or serve it on the side for dipping, then garnish with cilantro. Enjoy!
