  • 1 whole cut-up chicken (or 4 boneless chicken thighs, skinless)
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 celery stalks, diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon fresh thyme (or ½ teaspoon dried)
  • 1 bay leaf
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

    Season the chicken pieces with salt and pepper. Heat olive oil in your Le Creuset Dutch oven over medium-high heat. Sear the chicken until golden brown on both sides, about 5-7 minutes per side. Remove the chicken from the pot and set aside.
