Ingredients
Quantities are shown as originally provided.
- 1 lb ground chorizo
- 1 cup almond flour
- 1 onion
- 2 cloves garlic
- 1 tspn smoked paprika
- 1 tspn cumin
- 3 tbsp fresh parsley (or 2 tbsp dried parsley)
- 1/8 tspn salt
- 1/4 tsp pepper
Instructions
- 1
Pre-heat your oven to 350 degrees
- 2
While the oven is pre-heating, dice the onion and garlic and chop up the parsley
- 3
Add onion, garlic, parsley, almond flour, chorizo, cumin, smoked paprika, salt and pepper to a bowl and mix well. You can use your hands (like I did). If you don’t want to get your hands messy, use some disposable gloves and mix this up well.

After the meat and spices are well combined, you will break off small bits (about 2 tablespoons approx.) and roll them up. Then place rolled up Chorizo balls on a parchment lined baking tray and bake for 30 minutes at 350.

Remove from oven and let rest for about 5 minutes before enjoying plain or with your favorite sauce.
