Ingredients

Quantities are shown as originally provided.

  • 20 wooden skewers
  • 750 gram lean beef cubed
  • 1/2 cup coconut milk
  • 3 teaspoon garlic crushed
  • 4 red chilies sliced
  • 1 tablespoon brown sugar
  • 2 tablespoon coriander chopped
  • 2 tablespoon lime juice
  • 1 teaspoon shrimp paste
  • 1 tablespoon ginger crushed
  • 1/4 cup vegetable oil
  • 1 tablespoon seasame oil
  • 2 tablespoon seasame seeds

Instructions

  1. 1

Heat a wok and add a little oil. Add the red chili slices, shrimp paste, brown sugar, ginger, garlic, and lime juice. Bring to a boil, being careful not to burn. Add the coconut milk and mix well, simmering but not bringing to a full boil

  2. 2

Cool the mixture and transfer it to a large bowl. Add the beef cubes, cover, and place in the refrigerator overnight

  3. 3

Thread the beef onto skewers. Add the vegetable and sesame oil mixture to the remaining sauce in the bowl

  4. 4

Place the skewers on a hot BBQ, preferably over charcoal, or cook in a pan on the stove. Brush with the sauce mixture and cook until golden brown

  5. 5

Sprinkle with sesame seeds to garnish and serve with a dipping sauce
