Honey Butter Chips

Ingredients
Quantities are shown as originally provided.
- 1 russet potato, peeled and cut into ~1/16” thick slices
- 1/4 cup vinegar
- ~3 cups water, just enough to submerge the potatoes
- 1/4 cup unsalted butter
- 2-3 tbsp honey
- 1/4 tsp salt, more or less to taste

Rinse the sliced potatoes under cold water until the water runs clear to remove excess starch.

Stir together the vinegar and water until combined. Pour this onto the potatoes and let the potatoes soak in the vinegar liquid for 45 mins.

Once soaked, pat the potatoes dry. Deep fry it in oil for about 5 mins or until golden and crispy.

In a separate pot, melt together the butter, honey, and salt. Let this cook for ~2 mins to allow the sauce to thicken and become stickier.

Toss in the fried potato chips and stir to evenly coat with the honey butter sauce.

Top with parsley and serve immediately.
