- 4 lb Premium Center Cut Pork Belly
- 1 cup Kosher Salt
- 1/2 tsp Five Spice Powder
- 1/2 tsp Garlic Powder
- 1/2 tsp Sugar
- 1/2 tsp White Pepper
- 1/4 tsp Salt

Using a fork or skewer, poke holes all over the skin side of the pork belly

Then, combine five-spice powders, garlic powder, sugar, white pepper, and salt in a mixing bowl. Rub spices on the meat side of the pork belly only

Cover all sides of the pork belly meat with foil, leaving the skin exposed. Put the pork belly in the fridge, uncovered, for 24 hours to let the skin dry out

The next day, completely cover the top of the pork belly skin with kosher salt. Put on a wire rack, and bake at 350F degrees for 40 minutes

Remove salt cap, and brush away excess salt; return pork belly to the oven at 375F for 30 minutes or until internal temp hits 145F

Broil on low for 2-5 minutes or until pork belly skin has expanded and crisped up

Let the pork belly cool for 10-15 minutes before slicing
