Fried Shrimp Toast

This shrimp Toast recipe is an homage to my favorite seafood restaurant in Seattle, Local Tide! The shrimp toast is juicy, crispy, and fried to perfection!

Ingredients

Quantities are shown as originally provided.

  • 4 slices White Bread
  • Canola Oil for frying
  • 1/2 lbs Shrimp
  • 1 oz Pork Fat
  • 1 Egg White
  • 2 Green Onions
  • 2 tsp Cornstarch
  • 1 tbsp Fish Sauce
  • 1 tsp Garlic Powder
  • 1 tsp Sugar
  • 1 tsp Sesame Oil
  • 1/2 tsp White Pepper
  • Sesame Seeds
  • Green Onions

Instructions

    Partially freeze pork fat for 30 minutes before slicing into small pieces. Add to a food processor and blend until it becomes a paste. Add cleaned and peeled shrimp to food processor and pulse to mix

    Add egg white, cornstarch, and green onions. Season with fish sauce, sugar, garlic powder, white pepper, and sesame oil. Process until smooth

    Evenly spoon the shrimp mixture over four slices of white bread, making sure the bread has full coverage. Cut off the crust and slice it into four even pieces diagonally, creating triangles

    Add canola oil to a pan and heat up to 325F. Add the shrimp toast, shrimp side down, and fry the first side for 2 minutes. Flip and fry the other side for 1 minute, or until golden brown

    Transfer to a cooling rack, or paper towel to drain. Season with salt, garnish, and serve!
