Ingredients

Quantities are shown as originally provided.

  • 2 tbsp your preferred oil (I used olive oil)
  • 1 can young jackfruit
  • 3 tsp coriander
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp freshly grated ginger
  • 1 red onion
  • 2 cloves garlic
  • Cilantro
  • To assemble the tacos:
  • Jalapeno (cilantro, guacamole, shredded lettuce.)

Instructions

  1. 1

Drain the jackfruit and, using a colander, rinse it well. Then pat it dry as much as you can - then, place it in a bowl.

  2. 2

Into the bowl with the jackfruit, add in the coriander, cumin, chili, smoked paprika and mix well so the jackfruit is coated with the spices and set aside.

  3. 3

Chop up the onions and garlic and set aside.

  4. 4

Peel the ginger root and grate it up (I grate up a batch and save to use during the week).

  5. 5

Add the oil to a frying pan over medium heat.

  6. 6

Add in the chopped onion and saute about 5-7 minutes.

  7. 7

Add in the garlic and saute a minute or so.

  8. 8

Then add in the spiced jackfruit and saute about 7-10 minutes, stirring often during this time.

  9. 9

When done, season with salt and pepper to taste, garnish with chopped cilantro.

  10. 10

Assemble tacos with jalapeno, cilantro, guacamole, shredded lettuce and copious amounts of spiced jackfruit.
