Ingredients

Quantities are shown as originally provided.

  • 2 cups dry rolled oats
  • 2 scoops protein powder {I used vanilla whey }
  • 2 cups all-natural Pumpkin Puree { one 15 oz can }
  • 1 cup unsweetend almond milk
  • 2 whole eggs (or 6 egg whites)
  • 1 tsp Stevia granules or sweetener of choice
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 cup Cacao chips (or Lily’s brand sweetened with stevia)

Instructions

    Preheat oven to 350 degrees f

    In large bowl combine all ingredients well.

    Scoop batter evenly into muffin tins {I used cupcake liners }

  4. 4

    Bake 17-18 minutes, until centers are just set.
