Ingredients
Quantities are shown as originally provided.
- 2/3 Cup Fresh Strawberries, stems removed
- 2 tbsp Apple Cider Vinegar
- 2 tbsp Maple Syrup or Honey
- 2 tbsp Fresh Lime Juice
- 2 Limes Zested
- 1/2 tsp Kosher Salt
- 1/3 Extra Virgin Olive Oil

Add baking soda to cold water and soak the strawberries in a large bowl for 5 minutes. It would be even better to cover and shake it a few times.

Rinse and pat dry fresh strawberries with a kitchen paper towel.

Alternatively, soak and wash the fresh strawberries with a fruit and veggie spray like this one.

De-stem the strawberries and remove the core with a strawberry huller or a sharp pairing knife.

Add all ingredients (except the oil) into a food processor and blend until smooth.

Stream in the oil and pulse until mixed and thickened.

Carefully remove the blade from the food processor(!!)

Pour salad dressing into an airtight glass jar.

Add your favourite salad greens, such as arugula, baby spinach or spring mix, in a salad bowl.

I highly recommend investing in a quality salad spinner. Drying your veggies thoroughly is so important after they are washed. It helps prevent wilted herbs and vegetables and stays fresher and longer!
