Ingredients

Quantities are shown as originally provided.

  • 1 cup Sticky Rice
  • 4 cups Water
  • 1/2 cup Annatto Seed Oil
  • 1 Small Shallot
  • 1 tbsp Minced Garlic
  • 1/2 lb Lean Ground Pork
  • 1 cup Sugar
  • 1/2 cup Fish Sauce
  • 2 oz Crab Paste in Soya Oil
  • 1 tbsp White Vinegar
  • Salt to Taste

Instructions

    Wash and drain sticky rice, and add to a pot with boiling water. Bring up to a boil, and skim off any impurities. Reduce the heat, and simmer for fifteen minutes

    While the sticky rice is cooking, finely mince a small shallot and garlic cloves. Then, add annatto seed oil, minced shallots, and garlic to a pan on medium heat. Fry for one minute until fragrant

    Add in ground pork, and using a wooden spoon, break the pork up and mix well. Then, season with sugar, fish sauce, and crab paste. Let this lightly simmer until the pork is cooked through

    Using an immersion blender, blend the sticky rice until a smooth paste is formed. Add ground pork mixture, and continue to blend until you reach your desired consistency. Let the sauce simmer for another five minutes, add in white vinegar, and adjust the seasoning to taste

    Serve with Nem Nuong/Pork Sausage Spring Rolls and enjoy!
