  • 2 lbs Chicken Wings
  • 1 tbsp Oil
  • 1/2 cup Water
  • 2 Bay Leaves
  • 1/4 cup Soy Sauce
  • 2 tbsp Dark Soy Sauce
  • 1/2 cup White Vinegar
  • 2 tbsp Brown Sugar
  • 6 Garlic Cloves
  • 1/2 tbsp Whole Peppercorns
  • Green Onions
  • Black Pepper

    Marinade:

    In a mixing bowl, combine soy sauce, dark soy sauce, white vinegar, brown sugar, garlic cloves and whole peppercorns. Mix well and ensure sugar is fully dissolved

    Add chicken wings and coat evenly. Allow chicken to marinate in the fridge for a minimum of 30 minutes, but overnight is optimal

    Cook:

    Remove chicken wings from the marinade and reserve the marinade for later, then pat wings dry with a paper towel

    To a big pan or pot on medium-high heat, add a splash of oil, and sear the marinated chicken wings on both sides for 1-2 minutes

    Pour in the reserved marinade, and add just enough water to cover about 75% of the chicken. Bring up to a boil, skim off any impurities then add in bay leaves. Lower the heat, and let it simmer covered for 30-45 minutes or until chicken is tender

    Make any final adjustments to seasonings

    Serve the chicken adobo over rice, spooning over plenty of sauce. Garnish with green onions and black pepper, and enjoy!
