  • 6 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 cup black olives, sliced
  • 1/2 cup pepperoncini, sliced
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup croutons
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. 1

First, let’s get all our ingredients ready. Slice the romaine lettuce into small pieces and transfer it to a big salad bowl. Halve the cherry tomatoes, thinly slice the red onion, and slice the black olives and pepperoncini. Shred the mozzarella cheese and grate the Parmesan cheese if needed

  2. 2

In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, and dried basil. Season with salt and pepper to taste. Whisk until everything is well combined

  3. 3

Add the cherry tomatoes, red onion, black olives, pepperoncini, shredded mozzarella cheese, and grated Parmesan cheese to the bowl with the romaine lettuce. Toss gently to mix everything together

  4. 4

After adding the dressing to the salad, toss it once more to make sure everything is well coated

  5. 5

Finally, sprinkle the croutons on top just before serving to keep them nice and crunchy. Serve immediately and enjoy!
