Chinese New Year Turnip Radish Cake 蘿蔔糕
Chinese Turnip Radish Cake is a traditional, homey kind of food with all the traditional Chinese goodies in it: dried shrimp, dried mushrooms, dried scallops and chinese sausage lap cheong.

Ingredients
Quantities are shown as originally provided.
- 2.2 lbs (1 kg) White radish
- 1 cup Dried Scallop
- 1 cup Dried Shrimps
- 3 Chinese Lap Cheong 臘腸
- 15 medium sized Dried Mushrooms
- 2 3/4 cups (434g) Rice Flour
- 1/2 cup (57g) water chestnut flour
- 1 cup (236g) Cold water
- 3 cups (709g) Hot Water
- 1 tbsp Salt
- 2 1/3 tbsp (30g) Sugar

Wash and peel the radish. Dice into 1/4 inch squares. Steam 12 mins over medium heat until fragrant and soft. Remove and let cool.

Soak the mushrooms in just boiled hot water to cover and let sit until soft, half hour to hour. When soft, remove, squeeze dry and shred. Reserve mushroom soaking water, around 2 cups.

Steam the scallops for 15 minutes and then shred.

Slice lap cheong into thin slices.

Rinse dried shrimps and chop roughly.

Mix all except radish together. Reserve 2 cups of mixed ingredients to use later as a topping for the cake.

In a large bowl, mix the batter: the rice flour, water chestnut flour cold water and reserved mushroom soaking water. Stir well.

Heat up large wok, add 2 tbsp oil, and stir fry the sausages, mushrooms, shrimp and scallops until fragrant.

Add radish. Add in the salt, sugar, chicken stock and hot water and bring to a boil.

Give your batter a final stir and pour in all at once. Turn off the heat immediately and quickly stir until everything is well mixed.

Pour into the aluminium foil trays, smoothing the tops.

Steam over high heat for 45 minutes.

Once the steaming is done immediately decorate the top of the cakes with the reserved chopped ingredients, pressing down carefully with your hand. Let cool.

To serve, slice out the portion that you want then either steam hot or fry until golden brown.
