Chocolate Sourdough Zucchini Cake
Chocolate sourdough zucchini cake is rich with a deep chocolate flavor, perfectly moist crumb and topped with a downright delicious chocolate whipped cream. The perfect cake for a party or family gathering.

Ingredients
- 120 g sourdough discard (about 1/2 cup, see recipe notes)
- 2 large eggs (about 100 grams)
- 125 g buttermilk (about 1/2 cup, see recipe notes)
- 115 g vegetable oil (about 1/2 cup, or any neutral flavored oil)
- 325 g granulated sugar (about 1 1/2 cups)
- 12 g vanilla extract (about 1 Tablespoon)
- 145 g all purpose flour (about 1 cup)
- 60 g cocoa powder (about 1/2 cup)
- 7 g salt (about 1 teaspoon)
- 6 g baking soda (about 1 teaspoon)
- 3 g baking powder (about 1/2 teaspoon)
- 240 g finely shredded zucchini (about 2 cups)
- 240 g heavy whipping cream (about 1 cup)
- 30 g cocoa powder (about 1/4 cup)
- 30 g powdered sugar (about 1/4 cup see recipe notes for sweeter topping)
- 2 g vanilla extract (about 1/2 teaspoon)

Preheat the oven to 350ºF and prepare a 9 by 13 pan, affiliate link, by lining with parchment paper or spraying with non-stick cooking spray.

Finely shred the zucchini on a box grater. Set aside.

In a large bowl, whisk together sourdough discard and eggs. Add the buttermilk, oil, granulated sugar and vanilla extract. Whisk until completely incorporated and smooth.

To a small bowl, use a fork to fluff together the flour, cocoa powder, salt, baking soda and baking powder.

Pour the dry ingredients on top of the liquid ingredients and mix together with a wooden spoon or spatula. Add the shredded zucchini and mix together until just incorporated.

Pour the batter into the prepared pan and bake for about 30 minutes. Stick a knife or toothpick in the middle of the cake to check for doneness. The cake will be very moist, rise and spring back lightly when touched with your finger. Once baked through, allow the cake to cool completely.

Using wire beaters, whip together the heavy cream, cocoa powder and powdered sugar until thick and creamy. Add the vanilla extract and mix until incorporated. Spread over cake or dollop on top of each slice of cake. Enjoy!
