Crispy Garlic Spare Ribs
I recently had these crispy garlic spare ribs at a bar, and after that very first bite, I realized something that may be just a little out of pocket. These crispy garlic spare ribs might just be the perfect appetizer, and they might even be better than chicken wings. I know that sounds kinda crazy,

Ingredients

- 2 lbs Pork Spareribs
- 1 inch nub Ginger
- 1/2 tsp Salt
- 2 cups Oil, For Frying
- 1 tbsp Oil
- 2 tbsp Garlic, Minced
- 2 tbsp Soy Sauce
- 4 tbsp Honey
- Sesame Seeds
- Lemon Wedge

Prep the Pork Spare Ribs:

Remove any membrane from the back of the ribs for a more tender bite, then cut between the bones into individual pieces. Bring a pot of water to a boil and parboil the ribs for 5 minutes to remove impurities. Drain and rinse with cold water

In a clean pot, bring fresh water to a boil, add the parboiled spare ribs and a nub of ginger, then simmer covered for 30 to 45 minutes or until cooked through and tender but not falling apart. Drain and pat completely dry

Fry the Spare Ribs:

Heat oil to 375F in a deep pan or fryer. Fry the ribs in batches for 2-3 minutes, until they are golden brown and crispy. Remove and drain on a wire rack or paper towels

Make the Garlic Soy Sauce:

In a pan over medium-high heat, add a splash of oil and sauté minced garlic for 1-2 minutes or until fragrant

Add soy sauce and honey, stir to combine, and let it reduce slightly until glossy. Add the fried ribs and toss until evenly coated in the sauce

Garnish and Serve:

Transfer the crispy garlic spare ribs to a plate, sprinkle with sesame seeds, and serve with a wedge of lime. Enjoy as an appetizer or serve over a bed of rice for a full meal!
