Ingredients

  • 4 cups baby arugula (washed and dried)
  • 1 grapefruit (peeled and sliced)
  • 2 blood oranges (peeled and sliced)
  • 1 orange (peeled and sliced)
  • 1 avocado (peeled, pitted, and sliced)
  • 1½ tbsp sliced almonds
  • Fresh mint (torn)
  • ½ tbsp lemon juice
  • ⅛ tsp dijon mustard
  • 1½ tsp honey
  • 1 tsp orange zest
  • 3 tbsp extra virgin olive oil
  • Salt (to taste)

Instructions

    For the dressing, whisk together the lemon juice, dijon, honey, and orange zest. Season with a pinch of salt. Slowly whisk in olive oil until emulsified. Alternatively, add all the dressing ingredients to a small jar and shake vigorously until emulsified.

    Spread arugula onto a serving dish. Layer with grapefruit, blood orange, orange, and avocado slices. Lightly season with salt.

    Sprinkle with almonds and fresh mint over the top.
