Grapefruit Matcha Tonic

This grapefruit matcha tonic is perfect for the summer or if you want to change up your afternoon pick-me-up beverage! It's well balanced between bitter, sweet, fruity, with just enough carbonation. This bubbly grapefruit and matcha beverage can also be separated into layers, making it perfectly picture worthy!

Ingredients

  • 1 cup fresh pink grapefruit juice ((about 2 to 3 pink grapefruits juiced))
  • ¾ cup granulated sugar
  • 3 tablespoons prepared grapefruit syrup ((3TBSP = 1.5 fl oz))
  • ½ cup tonic water (or more to your preference (½ c = 4 fl oz))
  • 1 teaspoon universal grade matcha (or ceremonial grade matcha)
  • ¼ cup water (room temperature or cool)
  • Grapefruit slices ((optional for garnish))
  • Ice (as needed)

    Make the grapefruit syrup:

    Combine the fresh pink grapefruit juice and sugar into a small saucepan. Place the saucepan over medium high heat, and occasionally stir the mixture until the sugar has dissolved.*If you prefer, you can strain the grapefruit juice through a fine mesh strainer to remove pulp and seeds before using.*

    Transfer the grapefruit syrup to a sanitized jar and let cool completely before covering and refrigerating. Be very careful! The syrup will be quite hot!

    Make the grapefruit matcha tonic:

    Into a serving glass, add 3 tablespoons of homemade grapefruit syrup. Add your desired amount of ice, then top with the tonic water *If you want to stick the grapefruit slice against the glass as garnish, we recommend doing so before adding ice.*

    In a small bowl or matcha bowl, add the matcha powder. Add half of the water and mix well with a matcha whisk until there's no more clumps of matcha left. Add the remaining water and whisk briskly until slightly foamy.

    Gently pour the matcha into the glass, over the tonic water. Repeat for more servings. Stir and enjoy!
