This recipe takes everything comforting and nostalgic about spam musubi and turns it into a warm, scoopable bake that you can throw together

Ingredients

  • 1 Can Low Sodium Spam
  • 1 tbsp Oil
  • 2 tbsp Eel Sauce, See Below
  • 4 Large Eggs
  • 1/2 tsp Salt
  • 1 tbsp Oil
  • 3 Cups Cooked White Rice
  • 1 tbsp Rice Vinegar
  • 1/2 cup Soy Sauce
  • 1/2 cup Mirin
  • 1/4 cup Sugar
  • 2 tbsp Sake
  • 1/2 cup Kewpie Mayo
  • 2 tbsp Sriracha
  • Green Onion
  • Furikake

Instructions

    Make the Unagi Sauce:

    Combine soy sauce, mirin, sugar, and sake in a small sauce pot. Bring to a gentle simmer over medium heat. Reduce by half until slightly thickened. Remove from heat and let cool completely. Transfer to a squeeze bottle and set aside

    Make the Spicy Mayo:

    Combine Kewpie mayonnaise and sriracha in a bowl. Mix until smooth. Adjust the ratio to your preferred level of spice. Transfer to a squeeze bottle and set aside

    Prepare the Rice:

    Cook the rice in a rice cooker or on the stovetop. While warm, transfer the rice to an 8x8 casserole dish. Drizzle with rice vinegar and gently mix until evenly seasoned

    Cook the Omelette:

    Whisk eggs with a pinch of salt and pepper. Heat a pan over medium heat with a small splash of oil. Pour in the eggs and cook into a flat omelette, flipping once, until cooked through. Let cool slightly, then dice into small cubes

    Cook the Spam:

    Cut the Spam into uniform bite-sized pieces, similar in size to the diced egg. Heat a pan over medium heat with a splash of oil. Add Spam and sauté for 2 to 3 minutes until lightly browned. Add the unagi sauce and cook for another 1 to 2 minutes, until caramelized. Remove from heat

    Assemble and Spam and Egg Bake:

    Preheat oven to 375F. Evenly distribute the Spam and egg over the rice. Gently press down to form an even layer. Bake for 5 minutes until warmed through

    Top with furikake, unagi sauce, spicy mayo, and chopped green onions. Serve as is or with small sheets of nori for wrapping. Enjoy!
