Ingredients
Quantities are shown as originally provided.
- 2 tablespoons vegetable oil
- 4 large eggs (beaten)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons sesame oil
- 1 1/2 cups frozen peas and carrots
- 2 tablespoons minced garlic
- 4 cups cooked rice
- 1/2 cup sliced green onion
- 1/4 cup soy sauce (regular or low sodium)

Heat a wok or large skillet over medium heat. Add 2 tablespoons vegetable oil.

Beat 4 large eggs and pour them into the wok. Season with 1/2 teaspoon salt and 1/2 teaspoon black pepper. Cook, stirring gently, until fully scrambled. Transfer eggs to a plate and set aside.

Increase heat to medium-high and add 2 tablespoons sesame oil to the same pan.

Once hot, add 1 1/2 cups frozen peas and carrots. Sauté for about 2 minutes, until heated through.

Add 2 tablespoons minced garlic and sauté for 1 minute, stirring constantly to prevent burning.

Add 4 cups cooked rice to the pan. Toss with the vegetables and sauté for about 5 minutes, breaking up any clumps and allowing the rice to lightly crisp.

Reduce heat to medium-low. Add 1/2 cup sliced green onion and 1/4 cup soy sauce, then fold in the cooked eggs.
