Spicy Sweet Potato Salad – Excellent Side Dish for BBQ’S!

Serves 8 ingredients: 4 sweet potatoes, medium diced 2 Tbs extra virgin olive oil 1 pint cherry tomatoes, sliced into halves 2 avocados, diced, & coated with 1 Tbs fresh lime juice 1 cup black beans (rinsed if canned) 1/2 cup plain greek yogurt 1 Tbs favorite hot sauce(more or less depending on heat preference) 1 tsp ground cumin 1 Tbs apple cider vinegar sea salt and pepper to taste 2 Tbs chopped fresh parsley, cilantro, or chives (use your fav)

  • 4 sweet potatoes (medium diced)
  • 2 Tbs extra virgin olive oil
  • 1 pint cherry tomatoes (sliced into halves)
  • 2 avocados (diced, & coated with 1 Tbs fresh lime juice)
  • 1 cup black beans (rinsed if canned)

    Preheat oven to 425

    Toss diced potatoes with olive oil

  3. 3

    Roast potatoes on flat sheet pan (I line with foil) for about 30 minutes

    In medium bowl whisk until combined well: yogurt, hot sauce, cumin, vinegar, fresh herbs, and salt & pepper.

    Gently combine all ingredients in a large bowl

    Sprinkle with a pinch of fresh herbs

    Serve immediately or refrigerate covered
