Ingredients

  • 8 large eggs
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 2 tbsp olive oil
  • 1 small yellow onion
  • 1 medium roma tomato (diced)
  • 1 red bell pepper (diced)
  • 1 serrano chile (thinly sliced)
  • 1/3 cup feta cheese crumbles

Instructions

    In a bowl or measuring cup beat the eggs, salt and pepper.

    In a large skillet over medium heat add the oil and sauté the onions for 2-3 minutes.

    Add the tomato, red bell pepper and serrano chile and cook another 3 minutes.

    Pour the beaten eggs over sautéed vegetables and add the feta cheese. Turn heat to low and gently stir. Cook until eggs are just about set and take off the heat, they continue cooking off-heat. Serve immediately.
