Ingredients

- 2 tablespoons honey
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon lemon juice
- 1 teaspoon white sugar
- 2 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes
- 1 tablespoon chopped fresh basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound jumbo shrimp, peeled and deveined
- 2 Gala apples, cored and cut into bite-sized chunks
- 1/4 cup strawberry jam (for glazing during grilling)
- Wooden or metal skewers (soaked in water if using wooden ones)
Instructions
- 1
In a medium-sized bowl, whisk together honey, olive oil, red wine vinegar, lemon juice, white sugar, minced garlic, crushed red pepper flakes, chopped basil, salt, and black pepper.
- 2
Pour half of the marinade into a resealable plastic bag and reserve the other half for later.
- 3
Add the shrimp to the bag with the marinade. Seal it tightly and shake gently to coat the shrimp evenly.
- 4
Refrigerate for 15 minutes to let the flavors soak in.
- 5
While the shrimp marinates, cut your Gala apples into chunks. Try to keep them roughly the same size as the shrimp for even cooking.
- 6
Thread the shrimp and apple chunks onto skewers, alternating between the two.
- 7
Preheat your grill to medium-high heat (about 375°F).
- 8
Lightly oil the grill grates to prevent sticking.
- 9
Place the skewers on the grill and cook for 3-4 minutes per side, brushing them with the reserved marinade and strawberry jam mixture as they cook.
- 10
Discard any leftover marinade that’s touched raw shrimp.
- 11
Remove the skewers from the grill and let them rest for 2 minutes.
- 12
Serve hot with your favorite sides or a light salad for a complete meal.
