  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon white sugar
  • 2 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes
  • 1 tablespoon chopped fresh basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound jumbo shrimp, peeled and deveined
  • 2 Gala apples, cored and cut into bite-sized chunks
  • 1/4 cup strawberry jam (for glazing during grilling)
  • Wooden or metal skewers (soaked in water if using wooden ones)

Instructions

    In a medium-sized bowl, whisk together honey, olive oil, red wine vinegar, lemon juice, white sugar, minced garlic, crushed red pepper flakes, chopped basil, salt, and black pepper.

    Pour half of the marinade into a resealable plastic bag and reserve the other half for later.

    Add the shrimp to the bag with the marinade. Seal it tightly and shake gently to coat the shrimp evenly.
