Run Bing (Taiwanese Spring Roll)
Run Bing (Taiwanese Spring Roll) is like the Taiwanese version of a burrito! It’s got many delicious tasty ingredients such as meat and veggies and usually also grounded peanuts wrapped in a thin soft crepe.

Ingredients

- 1 tablespoon cooking oil
- ½ pound ground pork
- ½ cup dougan (dried tofu), cut into small dice or thin strips
- 1 cup shredded carrots
- 1 cup shredded cabbage
- 1 cup rehydrated dried shiitake mushrooms, thinly sliced
- 1 cup bean sprouts
- Salt, to taste
- Run bing wrappers (rice paper wrappers), softened and warmed according to package instructions (steamed is a common method)
- Powdered sugar (optional, for serving)
- Ground peanuts (optional, for serving)
- Hoisin sauce (optional, for serving)

Prepare the Filling: Heat the cooking oil in a wok or large skillet over medium-high heat. Add the ground pork and cook, breaking it up with a spoon, until browned.

Add the diced dougan, shredded carrots, and shredded cabbage to the wok. Stir-fry for 1-2 minutes.

Add the sliced shiitake mushrooms and bean sprouts to the wok. Stir-fry to combine all the ingredients well.

Cover the wok or skillet and cook for another 1-2 minutes.

Uncover and continue to stir-fry until the vegetables are tender-crisp and the filling is cooked thoroughly. Season with salt to taste. Remove from heat and set aside to cool slightly.

Assemble the Spring Rolls: Lay a softened and warmed run bing wrapper on a large plate or cutting board. (Optional Sauce): If using hoisin sauce, use a spoon to lightly smear a small amount in the center of the wrapper. Place a spoonful or two of the pork and vegetable filling in the center of the wrapper. (Optional Garnishes): If desired, sprinkle a small amount of ground peanuts and/or powdered sugar over the filling. Bring two opposite sides of the wrapper towards the center, overlapping slightly. Fold the bottom edge of the wrapper tightly over the filling. Starting from the folded bottom edge, roll the wrapper tightly upwards, like a burrito or spring roll, until completely sealed.

Repeat with the remaining wrappers and filling.

Serve the prepared spring rolls immediately. They can be enjoyed as is or with additional hoisin sauce for dipping.
