- 1/2 cup All-Purpose Flour
- 1/2 cup Almond Flour
- 1/4 cup Granulated Sugar
- 3/4 teaspoon Baking Powder
- 1/4 teaspoon Baking Soda
- 1/8 teaspoon Salt
- 1/4 tsp Cinnamon
- 1/4 teaspoon Cardamom
- 1 Egg (beaten)
- 2 tablespoons Almond Milk
- 3 tablespoons Olive Oil
- 1 teaspoon Pure Vanilla Extract
- 1/4 tsp Almond Extract
- 1/2 cup fresh Strawberries (diced)
- 1/2 cup White Chocolate Chips
- 2 tbsp granulated sugar
- 2 tbsp brown sugar
- 1 1/2 tbsp butter (I used vegan butter)
- 4 tbsp all-purpose flour

Preheat oven to 400 degrees.

Add in the egg and beat it well, then add in the almond milk, olive oil, almond extract, and vanilla extract and mix well with a spoon.

Then add the all-purpose flour, almond flour, sugar, baking powder, baking soda, salt, cinnamon, and cardamom to the bowl with the wet ingredients and stir well.

Add in the diced strawberries and white chocolate chips and mix gently.

Then, pile 4 roughly equal mounds of dough onto a baking tray – making sure they are spaced far apart.

Then make the streusel topping by melting the butter slightly. Add in the granulated sugar and brown sugar and mix well. Then add in the all-purpose flour and crumble the mixture together so little crumbs form.

Sprinkle the crumb topping over the four muffin tops.

Place tray with muffin tops, in 400 degrees Fahrenheit preheated oven and bake for 5 minutes.

Lower oven temperature to 375 degrees and bake for another 25 minutes.
