- 1 c egg whites (about 8 large eggs)
- 4 oz Monterey jack cheese (cut into cubes)
- ½ c low-fat cottage cheese
- ¼ tsp onion powder
- ¼ tsp garlic powder
- ¼ tsp kosher salt (Diamond Crystal brand)
- ¼ tsp black pepper
- ⅓ c diced spinach
- 3 tbsp diced bell pepper
- warm water (for water bath)
Instructions
- 1
Preheat the oven to 325 °F.
- 2
In a blender, combine the 1 c egg whites, 4 oz Monterey jack cheese, ½ c low-fat cottage cheese, ¼ tsp onion powder, ¼ tsp garlic powder, ¼ tsp kosher salt, and ¼ tsp black pepper. Blend until smooth.
- 3
Pour the batter into silicone cups on a sheet pan.
- 4
Carefully add the ⅓ c diced spinach and 3 tbsp diced bell pepper on top of each cup. Use a chopstick or spoon to gently mix the toppings with the batter, but be careful not to dunk the toppings completely into the batter. You want to have some toppings peek out the top for visual appeal.
- 5
Place the sheet pan and silicone cups into the middle rack of the oven.
- 6
Add half an inch of warm water into the sheet pan.
- 7
Bake for 15-20 minutes, or until the cups are firm, and lightly browned on the edges.
- 8
Remove from the oven and place them on a cooling rack.
- 9
Gently remove the egg white bites from the silicone cups and serve.
