Ingredients

  • 200 g Beef (boneless, cut into small cubes)
  • 50 g Gram Flour (sifted)
  • 25 g Rice Flour
  • 1 Egg
  • 30 g Yoghurt (thick)
  • 1 tsp Garlic Paste
  • 1 tsp Ginger Paste
  • ½ tsp Turmeric Powder
  • 1 tsp Chilli Powder
  • ½ tsp Cumin Powder
  • ½ tsp Coriander Powder
  • ¼ tsp Black Pepper
  • ½ tsp Garam Masala
  • 1 tbsp Lemon Juice
  • 1 tbsp Coriander (finely chopped)
  • 1 Green Chilli (finely chopped)
  • Salt (to taste)
  • Oil (for deep frying)

Instructions

    In a bowl, combine beef cubes, turmeric powder and a pinch of salt; mix and let sit for 5 minutes.

    In another bowl, whisk together egg and yogurt until smooth.

    Add gram flour, rice flour, ginger garlic paste, chilli powder, cumin powder, coriander powder, black pepper, garam masala, and salt into the yogurt–egg mix; stir to form a thick batter.

    Fold in lemon juice, chopped coriander, and green chilli.

    Add beef cubes into this batter and toss to coat evenly. Let marinate for 10 minutes.

    Heat oil in a deep frying pan over medium heat.

    When oil is hot (but not smoking), drop coated beef cubes in small batches, ensuring they don’t touch.

    Fry each batch for 6-8 minutes or until golden brown and crisp, turning once for even colour.

    Remove onto paper towels to drain excess oil.

    Serve hot with mint chutney or tamarind sauce.
