Thai Glass noodle salad with leftover turkey is a delicious recipe made with leftover Thanksgiving turkey. It's my favorite way to use turkey leftovers for a quick and healthy salad. Ready in less than 20 minutes!

Ingredients

Quantities are shown as originally provided.

  • 5 oz dry glass noodles. They must be soaked in hot or warm water before use.
  • 6 oz turkey meat, minced or shredded, your preference. (:
  • 1/2 cup shallot, thinly sliced
  • 1/2 cup celery, leafy and tender parts only.
  • 1/4 cup shredded carrot
  • 1/4 cup jalapenos or bell peppers, thinly sliced
  • 1/ 2 cup cherry tomatoes.
  • 2 stalks green onion, thinly sliced into 1/4 inch pieces.
  • 1/4 cup mint leaves, roughly torn
  • 1/4 cup cilantro, chopped 1/2 inch pieces, stems included
  • 3 tablespoon lime juice
  • 2 1/2 tablespoon fish sauce
  • 1-5 fresh Thai chilis, chopped small. More if preferred.
  • 1/2 tablespoon garlic, finely minced
  • 1/2 teaspoon sugar. Optional
  • 1-2 tablespoons toasted rice powder
  • Ground white pepper. Optional but highly recommended for added depth of flavor.
  • Sugar. Add more towards the end if needed.
  • Dry chili flakes
  • Dried shrimp

Instructions

    Using a large bowl, soak the glass noodles in hot water for 5-10 minutes. Soak for 5 minutes in a heatproof bowl if using hot boiling water. If using warm water (but not boiling), soak for 10. Check the noodles using a fork to lift them to see if they are soft enough to curl around the forks. Drain the noodles and put them in a large bowl.

    In a small bowl, make the sauce by adding minced garlic, chilis, lime juice, fish sauce, and sugar. Whisk together until the sugar dissolves, and add to the bowl with noodles in it.

    Mix all the turkey, vegetables, and herbs in a large bowl. Mix well using a wooden spoon or spatula.

    Add the softened noodles to the salad, and mix in well. Use your hands to massage all the ingredients together. Kitchen gloves are handy for this!

    Adjust the flavors with more lime juice, fish sauce, or light touch of sugar until content. Add more chili flakes and white pepper for extra heat. Add toasted rice powder last, and serve! It's now ready to serve!
