Ingredients

  • 8 oz (230g) green beans
  • 1 tablespoon oil
  • 2 cloves garlic (finely minced, finely minced)
  • Ground peanuts (optional)
  • 1/2 cup creamy peanut butter
  • 3/4 cup coconut milk
  • 2 tablespoons Thai red curry paste
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar (or to taste)
  • 2 tablespoons ground peanut
  • Salt to taste

Instructions

    Trim the ends of the green beans, rinse them, and set aside.

    Add all the peanut sauce ingredients to a saucepan. Use a whisk to mix everything together quickly before placing the pan on the stovetop over low heat. Continue whisking the sauce until the ingredients are fully combined.

    As soon as the sauce starts to bubble, turn off the heat. If you prefer a thinner sauce, you can add a little water to dilute it while cooking. Remove from the heat and set aside.

    In a pan, add the oil and sauté the garlic until it turns light brown. Add the green beans and stir continuously until they are tender. Transfer to a serving plate, pour some peanut sauce over the green beans, and sprinkle with ground peanuts. Serve immediately.
