Nigerian Stewed Beans Porridge

This Stewed Beans Recipe is super fast to put together because we used precooked beans. So tasty you definitely can't resist a second helping! it will change your mind about beans. You will love it.

Ingredients

Quantities are shown as originally provided.

  • 3 Cups of black eyed peas ((Precooked but make sure to measure before cooking))
  • 2 medium onions
  • 1 habanero pepper chopped
  • 1 170g/6oz can organic tomato paste
  • 3/4 cup cooking oil of choice. ((I used vegetable oil))
  • 1 cup meat stock or water for the tomato sauce.
  • Salt/ bouillon to taste

Instructions

    Heat up oil in a Sauce pan, then sauté onions till translucent and fragrant.

    Add the Tomato paste, breaking it up as you stir. Stir continuously for about a  minute to prevent burning.

    Then add the water or meat stock, and seasoning.

    Lower heat to a simmer and allow to simmer till it thickens a bit. Takes about  2 minutes.

    Pour stew into your pot of beans. Mix till well combined. Taste for seasoning and adjust accordingly.

    Add 1/4 cup of water stir. Allow beans to simmer, when the food bubbles up to the surface, stir and turn off heat.

    Serve warm with pap, garri or plantains. This can be enjoyed on it's own too.
