- 1 kg Lamb Chops (washed and patted dry)
- 2 tbsp Olive Oil
- 1 tbsp Lemon Juice
- 2 tbsp Soy Sauce
- 2 tbsp Honey
- 6-8 cloves Garlic (crushed)
- 1 tsp Dried Parsley
- 1 tsp Dried Oregano
- 1 tsp Paprika
- 1 tsp Chilli Flakes
- 1 tsp Salt (adjust to taste)
- 1 tsp Black Pepper (adjust to taste)

Preheat your oven to 200°C / 400°F / Gas Mark 6.

Mix the olive oil, soy sauce, honey, lemon juice, crushed garlic, paprika, dried oregano, dried parsley, chilli flakes, salt, and pepper in a small bowl to create the marinade.

Place the chops in a baking tray and coat them thoroughly with the marinade mixture.

Set aside to marinate for at least 1 hour.

Arrange the chops in a single layer (do not cover with foil).

Roast in the centre of the oven for 30 minutes.

Remove the tray carefully, flip the chops over, and spoon the pan juices over them.

Return to the oven for another 10 to 12 minutes until the fat is golden and the meat is cooked through.

Remove from the oven and rest for 5 minutes before serving.
