Ingredients

Quantities are shown as originally provided.

  • 250 g Plain Flour
  • 50 g Caster Sugar
  • 7 g Yeast (Instant)
  • Salt
  • 120 ml Milk (Whole, Lukewarm)
  • 1 large Egg
  • 30 g Unsalted Butter (Unsalted, Softened)
  • 1 tsp Vanilla Extract
  • Vegetable Oil (For Frying)
  • Sprinkles (For Decoration)
  • 100 g Dark Chocolate (Chopped)
  • 30 g Butter (Unsalted)
  • 2 tbsp Icing Sugar
  • 2 tbsp Milk (Whole)
  • 1/2 tsp Vanilla Extract

Instructions

  1. 1

In a mixing bowl, combine the flour, caster sugar, instant yeast, and a pinch of salt.

  2. 2

In a separate bowl, whisk together the lukewarm milk, egg, softened butter, and vanilla extract.

  3. 3

Pour the wet ingredients into the dry ingredients and mix until a dough forms.

  4. 4

Knead the dough on a lightly floured surface for about 5 minutes until it becomes smooth and elastic.

  5. 5

Place the dough back in the mixing bowl, cover with a clean tea towel, and let it proof in a warm place for about 1 hour or until it has doubled in size.

  6. 6

After the dough has risen, roll it out on a floured surface to about 1 cm thickness. Use a round cutter to cut out donut shapes.

  7. 7

Heat vegetable oil in a deep frying pan to 180°C (use a kitchen thermometer to monitor the temperature).

  8. 8

Carefully place the doughnuts into the hot oil, frying for about 2-3 minutes on each side until they are golden brown and puffed up.

  9. 9

Remove the doughnuts from the oil and place them on a paper towel-lined plate to drain off excess oil.

  10. 10

In a microwave-safe bowl or using a double boiler, melt the chopped dark chocolate and unsalted butter together until smooth.

  11. 11

You can do this in the microwave by heating in short bursts and stirring in between until fully melted. Alternatively, use a double boiler on the stovetop.

  12. 12

Once the chocolate and butter are melted, remove from heat and stir in the powdered sugar, whole milk, and vanilla extract until the glaze is smooth and well combined.

  13. 13

If the glaze is too thick, you can add a little more milk to reach your desired consistency. If it's too thin, you can add more powdered sugar.

  14. 14

Allow the chocolate glaze to cool slightly, but make sure it remains in a liquid state for dipping the donuts.

  15. 15

Dip each warm doughnut into the prepared chocolate glaze, coating one side or the top as desired. You can dip them halfway or fully, depending on your preference.

  16. 16

Place the glazed doughnuts on a wire rack or a parchment-lined tray to allow any excess glaze to drip off.

  17. 17

Sprinkle them generously with colourful sprinkles.

  18. 18

Serve your delicious sprinkle doughnuts immediately.
